They are full of warm cinnamon and crisp apple bits and finished with a cinnamon sugar topping. It’s such a simple, budget-friendly, and heartfelt way to share a little homemade love during the season.

I usually kick things off around the second week of November, baking batch after batch of these little muffins of deliciousness and tucking them away in the freezer. These muffins freeze beautifully, which means I can make plenty ahead of time without any last-minute stress.

By the time December rolls around, I’ve usually made about 40 muffins! Some get wrapped up with festive ribbons, and others are paired with a little Christmas chocolate. They’re always such a hit, sweet, thoughtful, and wonderfully frugal Christmas gifts.

 

Recipe Cinnamon Apple Muffins

These cinnamon apple muffins are wonderfully simple, you’ll only need one apple to make a dozen muffins! If you love extra bursts of apple in every bite, feel free to bump it up to two apples. You can use any apple you like. From start to finish, you’ll have these cozy, cinnamon-scented muffins ready in about 35 minutes. Perfect for a sweet homemade gift!

Ingredients for 12 muffins

  • 1 apple (or 2 small apples)
  • 2 cups flour
  • 2 teaspoons flourfor coating apples
  • 1½ teaspoons baking powder
  • ½ teaspoon
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cinnamonfor coating apples
  • ½ cup unsalted (plant-based) butter – room temperature
  • 1 cup granulated sugar
  • 2 large eggs – room temperature
  • 2 teaspoons vanilla extract
  • ½ cup (plant-based) milk

For the Topping:

  • 1/2 cup (plant-based) buttermelted
  • 1/4 cup granulated sugar
  • 1/4 cup ground cinnamon

Cinnamon Apple Muffins — Instructions

 

  1. Preheat & Prep
    Preheat your oven to 375 degrees. Lightly spray your muffin tins with baker’s spray or grease well with butter or shortening, then dust with flour. Tap out any extra flour so the muffins don’t stick.

  2. Mix the Dry Ingredients
    In a medium bowl, sift together the flour, baking powder, salt, and cinnamon. Set aside.

  3. Coat the Apples
    In a small bowl, mix a bit of flour with ground cinnamon (just enough to lightly coat the apples). Toss the diced apples in this mixture until they’re evenly covered. Just be sure to dice the apple into small pieces so they blend perfectly. Set aside.

  4. Cream the Butter & Sugar
    In a large mixing bowl, beat the butter and sugar together until the mixture is light and fluffy, about 3 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  5. Combine Wet & Dry
    Gently fold the dry ingredients into the butter mixture, alternating with milk, and stir until everything is just combined. Don’t overmix! Fold in the cinnamon-coated apples.

  6. Fill & Bake
    Spoon the batter into the prepared muffin tins, filling each cup about ⅔ to ¾ full. Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.

  7. Make the Topping
    While the muffins bake, melt the butter and let it cool slightly. In a separate bowl, mix together granulated sugar and cinnamon for the topping.

  8. Coat the Muffins
    Once baked, let the muffins cool in the tin for a few minutes. Then remove them and brush or dip the tops in the melted butter, followed by the cinnamon-sugar mixture. Place them on a wire rack or plate to finish cooling (and to let that sweet topping set).
